With Chef Jessica Murray, WSU school of Hospitality Business Management
Jessica Murray creates unique baked goods using unexpected grains and legumes, such as garbanzo beans and lentils harvested from the Palouse. With these ingredients, she crafts decadent desserts like baklava, incorporating both garbanzo beans and lentils, and a rich molten lava cake featuring lentils.

Jessica Murray, a scholarly assistant professor in the School of Hospitality Business Management, holds multiple degrees in hospitality and food science. She joined the faculty of WSU's hospitality school in fall 2023 and is co-teaching a course on the fundamentals of cooking with Executive Chef Mat Morgan, as well as a business course focusing on environmental practices and principles in global travel and tourism.
Jessica also has a research appointment leading studies abroad experiences in Italy, Switzerland, and the United Arab Emirate.
