Peach and golden beet soup, with whipped creme fraiche, smoked almonds, flowers, micro rainbow herbs and burrata
SALAD
Arugula salad with orange blossom champagne vinaigrette, fennel and radish pickle, crushed pistachio, soaked apricot, burnt red onion, fennel and lavender infused fresh goat cheese.
SEAFOOD
Seared king salmon with Meyer lemon beurre blanc, roasted green tomatoes, charred pablano corn, purple sweet potato, mango puree, balsamic grilled zucchini
STEAK
Sous vide NY strip, basted with thyme, garlic and rosemary, tri color potato hash with caramelized onions, sautéed asparagus with lemon butter, spring onion gelee, toasted peppercorn, Parmesan cream and red wine reduction.
